Paul’s career began after high school as line cook for the Dry Dock Restaurant in Wickliffe. After enrolling in the Cuyahoga Community College Hospitality Management program he worked in the kitchens of the Bond Court Hotel in downtown Cleveland, Pier W, James Tavern and Holiday Inn Middleburg Heights.
In 1992, Paul began an eight-year stint under Executive Chef, Claude Rodier, as the Chef De Partie, and then the Restaurant Chef at the famed Sans Souci restaurant.
In June 2000, Paul joined the new Sweetbriar Golf Club to open their restaurant.
He has served as Executive Chef and General Manager at Legacy since its opening.
